PREPARING PINTO BEANS RECIPE

MEXICAN STYLE PINTO BEANS
Ingredients:
- 2 - 3 cups pinto beans
- ½ onion
- 2 – 3 garlic cloves
- Salt
Directions:
STOVE TOP:
In a large pan, soak beans overnight in water. NOTE: Beans expand so cover with at least 2” of water over the beans; drain the water and add fresh water and again cover with 2” of water over the beans. Bring to a boil and turn down to a low heat (still at a boil), add ½ onion and 2 – 3 garlic cloves. Cook for 2 ½ hours or until beans are tender. Add hot water if needed. Remove the onion and garlic when cooked.
PRESSURE COOKER:
Cook beans for 45 minutes or 1 hour depending on the size of the pressure cooker (read you directions). Refer to the directions of the pressure cooker. Remove the onion and garlic when cooked.
CROCK POT/SLOW COOKER:
Cook on slow in crock pot for 12 hours or high for 5 hours. Remove the onion and garlic when cooked.
When beans are finished mash until creamy. Drain extra juice if needed. Add salt to taste. If you can’t see the beans there is to much water. You can drain what you don’t need.
